The fruit of the "cormier" tree is known as the "Sorbus Domestica" which belongs to the same family of plants, the "Rosaceae" as apples, pears, quinces, apricots, plums etc. The "cormier" is the only wild tree that produces high yields of edible fruit and Eric uses 8 heirloom varieties of the fruit to make his version. The cormé drink can be traced back to the 15th century, when it was popular just to the north of the Loire. In his version, Eric updates the recipe while simultaneously respecting the heritage and origins of this drink in the same terroir.
