There are only about 50 hectares of Romorantin left, and François Cazin owns about a tenth of that, including some of the choicest plots. The vines are old (the youngest are about 40, and even those were largely propagated via marcottage), and the exhilarating minerality shines through when the juice is handled simply and gently.
Any dish with hints of smoke helps to bring out the remarkable scent of fresh hay, honey and pears, so we like it with Cantonese style tea-smoked pigeon, dry Memphis-style barbecue and smoked haddock and trout.
