This is a méthode ancestrale sparkling wine, meaning that the winemaking techniques are the same as in Champagne. The significant difference is in the region and the grape varieties. François encourages the terroir and the Chenin Blanc to sing as loudly as they can by refusing to chaptalise or to add commercial yeasts. The fresh character complimented by mushroom and honey notes is remarkably versatile, and can work a treat alongside spicy, savoury or sweet food.
