What do you do if the land you’ve bought has been thoughtlessly, fashionably planted with an international grape variety? Most natural winemakers would rush out to graft over with Grolleau or Pineau d’Aunis or Chenin Blanc, but Thomas Carsin decided to wait and see.
We’re glad he did, because the results are fantastic – a naturally ripe, fruity Sauvignon Blanc made without the aid of flavour-enhancing enzymes and yeast strains. There’s plenty of backing acidity to this wine, and a little secret: the «Terre!» ages like a great wheel of Comté, gaining intensity and minerality with a few years in the bottle.
