The Spagnol family named their estate after the hillside vineyard Col del Sas (Col meaning hill in Italian), and areproud of the eponymous flagship wine. Farmed by hand, this is a Prosecco for all occasions – fruity, flavourful and easy-drinking (maybe too easy!), but also minerally, crisp and bursting with Ssunshine if given a bit more attention.
The work the brothers put in is incredible – successive passes through the same vineyard to only pick the ripest, healthiest bunches, an in-house yeast starter for aromatic complexity, and a multi-month fermentation and lees contact process to deepen the wine’s texture.
