The Spagnol family named their estate after the hillside vineyard Col del Sas (Col meaning hill in Italian), and are proud of the eponymous flagship wine. Farmed by hand, this is a Prosecco for all occasions – fruity, flavourful and easy-drinking (maybe too easy!), but also minerally, crisp and bursting with sunshine if given a bit more attention.
The work the brothers put in is incredible – successive passes through the same vineyard to only pick the ripest, healthiest bunches, an in-house yeast starter for aromatic complexity, and a multi-month fermentation and lees contact process to deepen the wine’s texture. We like the Brut version best for its inherent versatility and gossamer sweetness.
