When he took over the family domaine in 1993, Vincent immediately started switching over to organic agriculture, convinced that this was the only way to farm sustainably. Silex soils give this old vines Sancerre a smoky complexity and otherworldly minerality, all layered over generous, beguiling fruit and spice. Lively acidity keeps the wine balanced and serves as a perfect foil for an aged goat's cheese.
