2016 Bernard Baudry Chinon «Domaine»
France, Loire Valley – Sa-Bo-Chi
Cabernet Franc | Dry medium-bodied red | Charcuterie, fresh cheeses
Bernard and Mathieu Baudry’s careful farming and cellar work has produced an array of suave, finely-poised wines, privileging elegance over power. The Domaine is typically a blend of wines from two different plots (which are harvested and vinified separately), with the majority from a parcel at the top of the plateau above the winery. It’s meant to be an early drinker, with an expressive bouquet, and ages wonderfully. The 2013 is wonderfully balanced, although we counsel a short decant before serving.
