Erick de Sousa makes a rosé which derives both its power and delicacy from the high quality of the Chardonnay grapes (usually about 90% of the final blend), sourced from the village of Grauves. That’s not to say that the Pinot Noir is there just to contribute colour; the berry fruits on the nose and palate bear testimony to the very fine Äy fruit.
It’s certainly fine as an aperitif, but really comes into its own with good seafood, where the acidity and bright fruit flavours work like a citrus-based sauce.
