The Laherte family have been farming in champagne since the 1890s, Aurélien who is now the 7th generation just keeps on improving the wines with better farming and smarter cellar keeping. The Ultradition is made of 60% Pinot Meunier from old vines in and near Chavot, 30% Chardonnay from the Côtes des Blancs and a final 10% from Pinot Noir vines planted near the bottom of Chavot village.
Harvested by hand, pressed in a traditional basket press, and depending on the quality of the juice, fermentation occurs in either vats or barrels. The final wine is aged for about half a year before disgorgement, although both Aurélien and ourselves prefer bottles with more age.
It’s at once both a fruity and racy Champagne, due to the high proportion of old vines Pinot Meunier, and very well-suited as an aperitif.
