Light-bodied, dry white; fragrant, leesy | white carrot cake (i.e. fried radish cubes)

Malvasia is often immediately appealing with its upfront floral fragrance, and a delicate, light structure; styled that way, it's usually easy to sell. But Mario's 80-year old vines are so deeply-rooted in the ponca (local dialect for the marl terroir) that there was no option but to make a layered, age-worthy wine. There's the characteristic camomile/white flower scent, but also a risen dough complexity from lees contact, and on the long, gentle finish, a persistent and subtle minerality. We love it with all manner of really savoury Singaporean dishes, but the standout pairing is any dish with plenty of chye poh (salted radish) and wok hei.
